Hotels in Eze are very, very expensive. If money is not a problem, just consult the Michelin or Gault/Millau. But here three addresses where a trustful guide helped me:

Auberge des Deux-Corniches, at Eze village on the D 46 1 km out of the centre. Tel and fax 0493411954. Closed mid November to mid-December.
Inexpensive is popular, so be sure to book in advance since it is packed here in the summer. The hotel is in the hills, overlooking Eze village and the Mediterranean. Very quiet and charming female owner. Agreeable doubles for 54 €. Half-pension 50 € a person. (obligatory in July-August).

Hermitage du Col d’Eze, 2.5 km from Eze village on the d 46 and the Grande Corniche. Tel 0493410068 fax 0493412405. Closed Dec 15 to Jan 15.
Another quiet, relaxing place and where you can catch some fresh air since it is way up in the hills. A swimming pool is included. Doubles from 28 to 50 € with shower and WC or bath and WC.

Hotel Du Golf, place de le Colette at Eze-village tel 0493411850 fax 0493412993. Closed Dec 25. On the rink of the moyenne corniche, a simple place with clean and well maintained rooms. If you want quietness don’t take the ones with balcony. Anyway, al rooms look out on the road. From 26 € with washbasin to 42 € with shower or bath and WC.
